How to Make a Delicious Coffee Walnut Cake

There’s nothing quite like tucking into homemade baked goods, and this coffee walnut cake is no exception. No matter if you’re hosting and want to impress your guests or simply want a sweet treat, this cake is sure to hit the spot.

Coffee and walnuts are a match made in heaven, and this cake combines them in the most delicious way possible. The rich flavour of coffee perfectly complements the sweetness of the walnuts and creates a taste that’s impossible to resist.

Tools of the trade

  • An oven
  • 2 Springform cake tins for a clean finish
  • Baking parchment for lining your tins
  • A trusty bowl and wooden spoon
  • A whisk (an electric one is best but not essential)

Ingredients

  • 230g unsalted butter (plus a little more for greasing the tins)
  • 90ml brewed Reviva Signature Ground Coffee, cooled to room temperature
  • 240g self-raising flour
  • 4 medium eggs
  • 230g soft brown or golden caster sugar
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 100g walnuts, roughly chopped

Filling Ingredients

    • 250g icing sugar, sifted
    • 160ml double cream, to evoke the creaminess of a cappuccino 
    • 110g mascarpone, at room temperature
    • 2 tbsp brewed Reviva Signature Ground Coffee, cooled to room temperature

Recipe

  1. Preheat your oven to 180°C.
  2. Prepare your cake tins by lining them with a little soft butter and baking parchment.
  3. Brew up your Signature Blend coffee and put it to one side to cool down.
  4. Beat your softened butter, flour, sugar, eggs, baking powder and vanilla together in your bowl, using a whisk. You want to keep going until it’s deliciously smooth and lump-free.
  5. Gently add in half of your room-temperature coffee, this will give it that rich intensity.
  6. Fold in the roughly chopped walnuts but reserve some as we’ve got other plans for those.
  7. Pour the batter into the cake tins and smooth the top with a spatula. 
  8. Sprinkle the remaining chopped walnuts evenly over one of the cakes.
  9. Bake in the preheated oven for up to 30 minutes, or until a skewer inserted into the centre comes out clean.
  10. Remove the cake from the oven and drizzle the plain cake with the remaining coffee.
  11. Meanwhile, as your cake is cooking, it’s the perfect time to make your creamy filling.
  12. Beat together the icing sugar, mascarpone and cream.
  13. Slowly fold your 2 tbsp coffee into the mix for a subtle buzz of flavour.
  14. Once your cake is cooled, spread the filling over the top of the coffee-soaked plain cake.
  15. Place the walnut-decorated cake on top of the filling for a polished yet professional finish.
  16. Slice and serve your delicious coffee walnut cake with a cup of freshly Reviva Coffee brewed for the ultimate indulgence.
