How to make the perfect cafetière coffee?

French press is a quick and simple brewing method that puts you in control of your coffee. Unlike the fine paper used in the Chemex, French press’ metal filter allows more fine coffee particles and oils to pass through, bringing out stronger flavours.

How can you create the perfect cup of French press coffee? Here’s your complete guide…


  • A cafetière, digital scales, a spoon and a timer.


  • Fresh coffee: start with high-quality, freshly roasted coffee beans, like our Signature ground coffee. The small press uses 18g of coffee per 240 ml of water.
  • Hot water: boil water and let it cool for a minute or two. The ideal temperature is around 93°C. If it’s too hot you’ll scorch the coffee. If it’s too cold the coffee won’t extract properly.

Brewing process:

  1. Add your coffee to the press.
  2. Add some water (50 ml will do) to make the coffee bloom. Wait 30 seconds and then add the remaining water, making circles as you go.
  3. Place the cafetiere on your scales. Add coffee, reset the scales to zero, and gently pour in water to achieve the right ratio (1 litre in this case). Leave to steep for 3-4 minutes, stirring the crust on the surface with a spoon half way through (this will make it fall back down). Scoop off the floating grounds (if necessary), then put the lid on and plunge.

Despite its très français name, the French press was actually patented in Italy. It was the brainchild of Attilio Calimani, a renowned Milanese designer. But here’s the kicker: the first manufacturing plant to churn out these coffee gems in 1958 wasn’t a coffee equipment supplier at all. It was a French clarinet factory!
